Age verification and purchase info:

All knife sales are strictly over 18 - Proof of age will be requested and ID must show the address used for dispatch. A photo of an official identification such as driving license or passport must be provided, furthermore it is now a legal requirement that an age verified postal service is used. I use UPS and the recipient is required to prove they are over 18 at point of delivery to the delivery driver. The cost of this service has been factored into the price of my knives unless otherwise stated. Should a sale take place in person the same checks will be carried out and unless I am absolutely satisfied that the purchaser is over the age of 18 no sale will take place.

  • Steel — 52100 high carbon, stoneworn finish

  • Blade length — 14.5cm

  • Depth at heel — 3.4cm

  • Handle material — Pau Rosa with Wenge dowel

  • Weight — 122g

  • Balance point — approximately 2cm back into the handle

A small knife with serious intentions. 52100 is a bearing steel — dense, tough, and capable of an exceptional edge. The stoneworn finish gives the blade a quiet, worn-in character that improves with use. The Pau Rosa handle is a deep, warm hardwood that sits beautifully in the hand, with a Wenge dowel at the bolster that adds both contrast and structure. Light, precise, and balanced just where you want it for detail work. The kind of knife that earns its place on the board every day.

Serious steel. Made by hand in Surrey.

Please ensure you familiarise yourself with high carbon steel care prior to purchasing.

  • Steel — 52100 high carbon, stoneworn finish

  • Blade length — 20.5cm

  • Depth at heel — 4cm

  • Handle material — green ripple ash (stabilised) with green canvas micarta ferrule and recessed aluminium pin

  • Weight — 147g

  • Balance point — at the blade, on the stamp

2100 is a bearing steel — exceptionally tough, dense, and capable of a frightening edge. The stoneworn finish gives the blade a raw, working character that only improves with time and use. At 20.5cm the K-tip profile sits between a traditional Gyuto and a Kiritsuke — long enough for serious prep work, with a tip precise enough for detail cuts. Remarkably light for its size, balancing right at the blade where a Gyuto should. The green ripple ash handle is stabilised for longevity and finished to a high lustre, with a canvas micarta ferrule and a recessed aluminium pin that give it an understated, functional elegance.
