All knife sales are strictly over 18 - Proof of age will be requested and ID must show the address used for dispatch. A photo of an official identification such as driving license or passport must be provided, furthermore it is now a legal requirement that an age verified postal service is used. I use UPS and the recipient is required to prove they are over 18 at point of delivery to the delivery driver. The cost of this service has been factored into the price of my knives unless otherwise stated. Should a sale take place in person the same checks will be carried out and unless I am absolutely satisfied that the purchaser is over the age of 18 no sale will take place.

This Nakiri is made for cooks who value precision, balance and a knife that feels responsive on the board. I make each knife entirely by hand, focusing on clean geometry and performance-driven details for serious kitchen work.
The blade is crafted from 26C3 “spicy white” high-carbon steel, chosen for its fine grain high edge retention. With a spine thickness of approximately 2.2 mm, it offers confident stability for chopping while remaining thin enough for smooth, controlled cuts. The 15.5 cm blade length and 4.6 cm heel height provide generous knuckle clearance and make it ideal for vegetable preparation.
Heat treatment is carried out using a traditional clay method during the quench, producing a genuine hamon. The blade is hand-finished to reveal this hamon, with subtle activity that makes each knife unique.
The handle is made from pink-dyed, stabilised Masur birch, offering durability, comfort and a distinctive visual contrast to the blade. At 139g, the knife feels light, balanced, and effortless to use over long prep sessions.

Inspired by the classic Chinese vegetable cleaver, this compact chopper brings a fresh interpretation to a time-tested design. Traditional Chinese cleavers (caidao) typically feature a predominantly flat edge profile; this blade, however, incorporates a subtle, intentional curve that broadens its versatility.
